It's time for a spicy Cucumber Radish Salad!


Why not go for a spiced up side dish? I got the idea of making this Cucumber Radish Salad. This spicy salad tastes great with chicken or turkey and rice.

I had this salad with a bowl of pumpkin soup with some slices of bread.

It is a refreshing crispy salad.






Radishes help with detoxifying your body and are good for your liver and stomach where they help improve their functions.












Ingredients:

  • 1 cucumber, sliced and cut into pieces

  • bunch of radishes, sliced

  • 1 apple, crisp and juicy like Ambrosia, Gala, McIntosh, cut into pieces

  • 50 g creamy goat cheese or dairy free coconut cream cheese

  • 1 inch ginger, peeled and grated

  • 1 tbsp raisins, soaked in 1/2 lemon juice for 5-10 minutes

  • 1 tbsp honey

  • 1 tbsp olive oil

  • 1/2 tsp celery seeds

  • salt and pepper to taste




Preparations:

  • mix cucumber, radishes and apple and raisins in a bowl

  • make a dressing by mixing goat cheese, ginger, honey, olive oil and celery seeds

  • add salt and pepper to taste to the dressing

  • spoon in the dressing into the cucumber mix
