This Turnip Salad with Carrot and Apple is so chockfull with vitamins and minerals that you will really feel good after eating it. And it is tasty as well. I made it and ate it together with a pasta dish with salmon. I think it was the first time I made a salad with parsnip. Turnip is not a vegetable that is common on menus in restaurants. Therefor not a lot of people are used to preparing it. Turnip is a root vegetable that you can eat raw as well as cooked. Turnip can taste a little bit bitter so I added an apple, raisins and honey to add some sweetness to the salad.

Ingredients Turnip Salad with Carrot and Apple:
3 turnips, peeled and grated
2 cups of carrot, chopped into tiny pieces
1 apple (Granny Smith), cut into tiny pieces
1/3 cup raisins
1/3 cup of sunflower seeds
1 lemon, juice
1 tablespoon dried parsley
black pepper and mineral salt to taste
2 tablespoons honey
3 tablespoons olive oil
Preparations Turnip Salad with Carrot and Apple:
in a bowl add all the ingredients and mix gently
put in fridge until use
Tip:
tastes great with a pasta and fish.
