Butternut Squash Mashed Potato



I have made this recipe after reading about the good bone health ingredients that are in #butternut #squash. Whenever I am reading about healthy ingredients in food I want to make it. Apparently there are lots of bone health promoting vitamins in butternut squash.

Dishes with potatoes and mashed are easy dinners. So yesterday I made this Butternut Squash Mashed Potato. Never cooked butternut squash before, but the boiling time was easy to google. And added some ingredients that would be tasteful. My family and I loved it!


And it is easy to make.



Butternut Squash:




Butternut squash is originally from Mexico and Central America.

Known in Australia and New Zealand as butternut pumpkin or gramma.







Butternut squash is full of:

  • manganese - for formation of bone and collagen

  • iron - good for bone mineral density

  • vitamin C - bone-builder

  • calcium - building block of bone

  • protein - good for muscle mass, which stimulates bone growth

  • beta-carotene for making vitamin A, which is good for the remodelling process of bones

  • bone building potassium, copper and vitamin K



How I made this butternut squash mashed potatoes, see below.


Ingredients:

  • 2 butternut squash

  • 4 potatoes

  • 4 garlic gloves, minced

  • olive oil

  • 1/2 glass of milk, heated

  • salt and pepper to taste

  • 1/2 cup grated cheese, like cheddar

  • 1 tsp nutmeg,

  • 1 tsp curry powder

  • 1 tsp cumin powder

  • 8 wieners, heated and added separately


Nutmeg nutrients, may:


  • help digestion,

  • treat insomnia,

  • relieves joint and muscle pain,

  • relieve depression, anxiety and help with concentration,

  • bad breath and toothache,

  • antimicrobial and anti-inflammatory and antioxidants,

  • regulate blood pressure and circulation,

  • boost libido


Curry Powder nutrients, may:


  • help with reducing inflammation

  • pain relieving arthritis

  • fighting and/or treating cancer

  • preventing Alzheimer

  • good for heart and digestion

  • lowers cholesterol

  • boosting metabolism


Cumin nutrients, may:


  • improve digestion

  • boost immunity

  • regulate blood sugar, blood pressure and cholesterol levels

  • be good for bone health

  • help menstruation cycle





Preparations:

  • peel the butternut squash

I discovered that the easiest way is to cut off both ends of the butternut squash. Then slice the butternut squash in slices. Get rid of the seeds. And get rid of the peel.

  • cut the butternut squash in 1 inch size pieces

  • bring water with 1 tbsp mineral salt to a boil and add the butternut squash pieces

  • boil for 8-10 minutes and discard the water

  • fry the minced #garlic with salt and pepper in olive oil in separate small frying pan

  • cook the potatoes with or without skin until tender, 20 minutes in boiling water

  • put all the ingredients, except for the wieners, in a big bowl and mash it.

  • Serve with heated wieners.
