Great for tea parties, this carousel with homemade fancy looking cupcakes with a healthy twist! Your friends and yourself will love these cupcakes!


Temper your bad feeling about eating too much sugar, too much fat with the thought that there is also something good for your body in these I-cannot-wait-to-eat-cupcakes!


These irresistible cupcakes are made with healthy Coconut Oil. It is amazing what good stuff there is in coconut oil.

How to make 12 cupcakes with coconut oil

Ingredients:

  • 1 3/4 cups all-purpose flour

  • 2 tsp baking powder

  • 3/4 cup coconut oil, slightly heated to soften

  • 1 cup shredded coconut

  • 1 cup sugar

  • 3 large eggs

  • 3/4 cup buttermilk

  • 1 tsp #vanilla extract

  • pinch of salt

  • whipping cream ready to use


Frosting:

  • juice from one lemon

  • 3 tbsp icing sugar


How to make cupcakes:

  • preheat oven to 350 F

  • mix flour, baking powder and salt in a bowl

  • in separate bowl mix coconut with sugar

  • mix eggs, one at a time into the coconut mix

  • add vanilla extract, shredded coconut and buttermilk

  • add the flour mix to the coconut mix

  • mix thoroughly

  • pour the cupcake dough into cupcake liners

  • bake for 16-18 minutes

  • test doneness with toothpick or thin bbq stick: if it comes out clean then the cupcakes are ready.

  • Let cupcakes cool on baking rack.


How to make frosting:

  • mix the icing sugar with the lemon juice into a spreadable paste

  • put paste on top of cooled down cupcakes

  • let the frosting harden


Serve the cupcakes with a swirl of whipping cream and enjoy!


Ideas:

  • add some shredded coconut on top of the whipping cream

  • use a few drops of natural colouring to add to the frosting to give the cupcakes a colourful look
