Ingredients to make Zucchini Loaf Cake with Chocolate and Walnuts:

  • 1/2 cup walnuts

  • 1/2 cup semi-sweet chocolate pieces (for example: Hershey's Semi Sweet Chipits)

  • 2 cups Cake & Pastry Flour (divided)

  • 3 eggs

  • 1/3 cup olive oil

  • 2 teaspoon baking powder

  • 1 teaspoon baking soda

  • 3/4 cup sugar

  • 1 teaspoon cinnamon powder

  • 1 teaspoon orange zest

  • 1/2 teaspoon salt

  • 1/2 teaspoon allspice, ground

  • 2 1/2 cup shredded zucchini (1 big or 2 small zucchini)


Preparations:

  • preheat oven to 350° F or 175°C

  • mix walnuts and chocolate pieces and 2 tablespoons Cake & Pastry Flour in a small bowl (this helps the walnuts and chocolate pieces not to sink but spread evenly in the dough)

  • then put all the other ingredients in a big mixing bowl and mix everything gently

  • add walnut and chocolate pieces mix and mix gently again

  • add dough to an oiled loaf cake pan

  • put in centre of the preheated oven for about 40 minutes until golden brown and/or wooden skewer comes out clean

When done, take loaf cake pan out of the oven and let it cool down.

With a spatula loosen the cake on all four sides.

Turn the cake pan upside down and take out the loaf cake gently.

Let cool completely before slicing.
