“No, not again!” ……. But Parsley Soup it is!

“No, not again!”, went through my head.

I asked my hubby yesterday what kind of soup he wanted to eat. And of course his answer was Parsley Soup, one of his favourite soups.

Actually it is not “No, not again!”, because I love this delicious soup. I have no problem making it of course. Serve it hot, eat and enjoy!

This soup is really great because it got lots of nutrients that are in parsley.

  • rich in antioxidants

Serves: 4 people

Appetizer: Soup

Time to prepare: 25 minutes

Ingredients:

- 2 tbsp olive oil

- 1 shallot, finely chopped

- 1 0r 2 #garlic cloves, finely grated

- 2 bunches of fresh #parsley, finely chopped

- 3 ½ cup or 800 ml water

- 2 tablets of vegetable broth or bouillon (for 1 litre), finely crumbled

- 2 tbsp flour

- Mineral Salt

- 250 ml Sour Cream

Preparations:

- medium heat olive oil in soup frying pot

- fry shallot until translucent

- add the grated garlic and fry for 1 minute

- add all the parsley but keep 1 cup apart

- fry until parsley is heated and mixed with shallot and garlic

- add the flour and heat until all onion, garlic and parsley are covered in flour

- pour ½ cup or 1 dl water into the frying and stir until water has been absorbed

- bit by bit add another ½ cup or 1 dl of water and stir until absorbed until all the water has been added

- add the crumbled broth tablets

- add pepper and salt to taste

- heat the soup until it is boiling

- simmer soup for 10 minutes

- before serving add 1 tbsp of sour cream and some of the kept apart parsley in center of soup

Serve and eat the soup really hot!

Enjoy with slices of freshly baked French bread!
