Gazpacho you can make in 6 minutes!

This Gazpacho soup is so easy to make. All you need is some vegetables, herbs and spices and a blender.

It is a lean soup as well. And vegan. Just make it for lunch or for a starter. You will impress your guests and yourself! Stuffed with healthy ingredients. The only fat that is used is olive oil.



Basil health properties, may be good for:

  • digestion/healthy gut

  • anti-inflammatory

  • fighting free radical activity

  • fighting depression

  • managing diabetes

  • supporting liver function

  • helping detoxify the body

  • benefitting skin



Cumin, health properties, may be good for:

  • improving digestion

  • boosting immunity

  • regulating blood sugar

  • blood pressure

  • cholesterol levels

  • bone health

  • menstruation cycle


Ingredients:

  • 600 gram tomatoes

  • 1 cucumber

  • 1 red bell pepper

  • 1 green pepper

  • 1/2 red onion

  • 2-3 garlic cloves, minced

  • 8-10 basil leaves

  • 1/4 cup (80ml) extra virgin olive oil

  • 2 tablespoons apple cider vinegar

  • 1 teaspoon salt

  • 1/2 teaspoon black pepper

  • 1/4 teaspoon cumin powder

  • 1 cup (240 ml) cold water

  • 2 bread slices, without crust


For garnish, for example with:

slices cucumber, croutons, chives, some drops of olive oil, some basil leaves, black pepper


Preparations:

  • roughly chop tomatoes, put in blender and blend for 5 seconds

  • roughly chop cucumber, add to blender and blend for 5 seconds

  • roughly chop red and green peppers, add to blender and blend for 5 seconds

  • roughly chop onion, add to blender and blend for 5 seconds

  • process until smooth

  • check seasoning and if necessary add more salt and/or black pepper

Ready!


Serve in small bowl and garnish with some basil leaves, chive sprigs, croutons and black pepper.


This soup is best to serve and eat chilled!
