Spinach and Kale Salad


This Spinach and Kale salad only has healthy ingredients. So if you are in for a healthy and tasty salad then try it out!


I was reading on my phone and came across some notes about dried parsley.

The notes came from a very interesting article in pupmed* about parsley. Parsley, especially dried parsley, contains apigenin. Lab testing done in 2013 found that apigenin might be able to kill cancer cells in breast, lung, ovary, pancreas, prostate and colon cancer. Other foods with lots of apigenin are celery, onions, oranges, camomile tea, oregano, thyme, coriander, artichoke and red wine.


Nutritional properties of #parsley, might:

  • have anti-cancer and antibacterial effects

  • support bone and heart health

  • protect eyes

  • be rich in antioxidants

Raisins are another tasty and healthy ingredient in this salad. I use raisins often if a dish needs some sweetness, instead of adding sugar.


Wondering how to make #raisins?

Here you go:

  • you have to get ripe, fresh and not mushy grapes

  • wash them thoroughly

  • remove the grapes from the stems

  • put paper towel on a tray with holes, so air can circulate

  • cover loosely with paper towel

  • put the tray in a sunny spot for around two weeks

  • put the grapes in a bowl

  • drizzle a few drops of vegetable oil and stir slightly so all grapes are covered

  • store in a glass jar and done are your raisins!

You can take all kind of grapes for different colours!


Nutritional properties of #raisins:

  • preventing diseases like arthritis, gout, kidney stones and heart disease, because of potassium and magnesium which helps reducing acidity and removing toxins from the system

  • help treating anaemia, because of iron, B-complex vitamins and copper

  • antioxidant, especially for colon cancer

  • antibacterial, a few a day can keep the cold away!

  • increase libido

  • keep eyesight strong

  • great for mouth and dental care, by preventing growth of bacteria

  • bone health, because of calcium

  • great for skin and hair health


Ingredients:

  • 2 cups baby-spinach/baby-kale (loosely packed)

  • 1 apple

  • 2 big white mushrooms

  • 2 tablespoons raisins


Salad dressing:

  • 2 tablespoons honey

  • 2 tablespoons apple cider vinegar

  • 1 tablespoon lemon juice

  • 1 tablespoon dried parsley


Preparations:

  • cut the spinach and kale into small pieces with kitchen scissors

  • cut the apple and mushrooms into bite-size pieces

  • put the greens, apple and mushroom pieces into a bowl

  • pour the dressing onto the salad and mix lightly

  • divide the salad into two separate bowls
