St. Patrick's Day is Colcannon Dish Day!

This recipe is a variation of the famous Colcannon dish. Originally the Irish Colcannon is made with mashed potatoes, kale and scallions.
It is a great dish you can make yourself with vegetables you like.
I made my Colcannon with pieces of potatoes, garlic, leek, baby bok choy, milk, butter, shredded cheddar cheese and smoked salmon.

What is bok choy?
Bok choy or bak choi is a Chinese version of cabbage. You can get them as one big one or smaller versions as baby bok choy. You can eat them raw or cooked. For this Colcannon dish I used the baby bok choy.
For cleaning: cut off the end part and take off each stalk and leave. Rinse them thoroughly. Dry before cutting.

How to make this Colcannon Dish?
Ingredients:
Preparations:
rinse, scrub and cut the potatoes into small pieces and cooked the potato pieces for 20 minutes
In the meantime:
wash thoroughly, dry and cut the leek into small pieces
heat olive oil in frying pan until medium hot
add leek to frying pan
fry for about 5 minutes
add minced garlic and fry for another minute
add the washed, rinsed, dried and cut bok choy
fry for around 5 minutes until all the bok choy is heated
Then:
combine all ingredients: potato pieces, butter, heated milk, shredded cheese, fried vegetables and smoked salmon pieces in a serving dish
mix gently
add salt and pepper to taste

Tip:
It is best to use a salad spinner to dry the, rinsed with cold water, leek and bok choy before cutting. This is to prevent the Colcannon dish to become soggy and wet.
