Super Bowl Cinnamon Chocolate Sand Cookies

These cookies are called "Sand Cookies" in the Netherlands because of the crunchiness of the sugar in them. Just as crunchy as sand, if you know what that is!

These cookies are really yummy. Great to enjoy with the Super Bowl Game 2021!

All the ingredients for these Cinnamon Chocolate Sand Cookies have some good stuff in them.

Like flour is a good source of iron but is relatively low on vitamins and minerals.

Brown sugar contains a little bit of calcium, potassium, iron and magnesium.

Don't get addicted to these cookies because flour is high calories, sugar is not good for diabetic persons and butter can be fat.

Always be careful not to eat too much of these crunchy cookies!

I chose for a mix of cinnamon and cocoa powder as added sweetness and taste.

Ingredients:

  • 60 gram or 1/2 cup brown sugar

  • 90 gram or 3/4 cup butter

  • 125 gram or 1 cup flour

  • 1 teaspoon cinnamon powder

  • 1/2 teaspoon cocoa powder

  • for dough coating: mix 1 tablespoon sugar with 1 teaspoon cinnamon powder

Preparations:

  • mix sugar and flour in a bowl

  • with two knives, add the cold butter by cutting the butter into the sugar/flour mix

  • continue until a good mixture of sugar and flour

  • knead the dough with one or two hands until the dough doesn't fall apart anymore

  • divide the dough into two parts

  • add cinnamon powder to one part and cocoa powder to the other part

  • with a dough roller roll the cinnamon dough into a square 1/8" or 2-3 mm thick

  • do the same with the cocoa dough

  • put the two squares on top of each other

  • put 1 tablespoon flour on clean surface to prevent sticking of dough to surface

  • roll this layered dough into a roll

  • coat the dough roll in sugar and cinnamon mixture

  • put plastic foil around the dough roll

  • put in fridge for 30 min

  • after cooling cut with a warm knife cookies 1/4" or 1/2 cm thick

  • place the cookies on a baking rack with parchment paper

  • preheat oven to 335 degrees Fahrenheit or 170 degrees Celsius

  • bake cookies for around 15-20 minutes

  • let cookies cool on cookie serving tray

Keep left over cookies in an air tight cookie container to keep the crunchiness.
