Winter Soup

It's winter and cold outside. I have made this delicious and tummy comforting soup. Why not treat yourself to something warm and spicy? This Winter Soup is good for a dinner. Nothing else, add just some French Bread. It is a filling soup. With lots of vegetables.


This soup is a little bit spicy, for children probably too much. So if you are making this soup for children then it is best to leave the Sriracha and Lime spice out.


History of Sriracha:

Sriracha is originally from Thailand.

More spices are used in hot climate countries because these spices have antibacterial properties that rid foods of pathogens, to protect people's health.

Sriracha is being used by different brands for making hot sauces.

Are you not curious to see what spices are in Sriracha?

It has a lot of spices in it, like garlic and onion, lime extractives, cayenne red pepper, vinegar, sunflower oil.

I will address the cayenne pepper health benefits here, since it gives this spice mix its spiciness.

  • ease itching

  • reduce inflammation

  • treat colds and congestion

  • protect the nervous system

  • boost antioxidant activity

  • have antibacterial properties


How to make this Winter Soup?


Ingredients:

  • 3 or 4 small shallots

  • 1 red bell pepper

  • 1 green bell pepper

  • 300 grams sweet potatoes, peeled and sliced

  • 3-4 garlic gloves, minced

  • 2 teaspoons Sriracha and Lime*

  • 1 1/2 teaspoons mineral salt

  • 4 cups or 1 litre unsweetened almond milk, divided

  • 3 cups or 750 grams frozen corn kernels

  • 2 tablespoons cornstarch

  • 4 green onions, sliced

  • olive oil

  • French Bread

Preparations:

  • cut shallots, peppers into small pieces

  • heat olive oil in soup pan medium hot

  • add shallots, pepper and garlic

  • add Sriracha and Lime and salt

  • fry for around 4-5 minutes, stirring now and then

  • add 2 cups of almond milk, corn and sweet potato pieces

  • heat until boiling and let it simmer for around 20 minutes

  • dissolve cornstarch in 1/2 cup of almond milk

  • add 1 1/2 cup of almond milk and almond milk with cornstarch

  • add green onions

  • let simmer for another 6 minutes


Ready to eat!

Slice the French Bread into thick slices and serve with the soup!

Yummy!!
