Yummy Fried Bok Choy with Noodles

Home grown Bok Choy are so much nicer to eat and so fresh. I had the opportunity to use freshly grown Bok Choy from my own yard. They were growing in a big planter, so you might be able to do this on your balcony or patio as well. The spot were my Bok Choy was growing was only getting late afternoon sun. So if your planter is in a sunny spot it might not be growing as well. But just try it. We bought tiny Bok Choy plants and put them in our planter. It is very easy to grow. In a couple of weeks you can harvest them.



Bok Choy is very easy to prepare as well. I washed the vegetables under rinsing water, took out the part where the leaf blades are growing together. Put the leaves in a strainer to dry them for usage. You can cut the leaf blades in smaller pieces or cut them with scissors, what I always do.



Bok Choy is actually cabbage and is very healthy for your bones, since it is stuffed with:

calcium, phosphorous, iron, magnesium, vitamin K, C and A, potassium and folate


Bok Choy is very low in calories: one cup shredded Bok Choy has only around 9 calories!



Ingredients:

  • 4-5 Bok Choy bulbs, depending on the size, rinsed and cut into 2 inch (5 cm) pieces

  • 3 shallots, finely cut

  • 3 garlic gloves, minced

  • 1 inch ginger root, grated

  • noodles for 4 people (I used ramen noodles for this recipe)

  • black pepper and mineral salt

  • Kikkoman* soya sauce

  • olive oil



Preparations:

Noodles:

  • prepare the noodles according to the instructions on the wrapping

Bok Choy:

  • in frying pan heat olive oil to medium heat

  • add garlic and ginger and fry for one minute

  • add shallots and fry for three minutes

  • add black pepper and mineral salt to taste

  • add Boy Choy pieces and fry for around 5 minutes, constantly stirring

  • make sure to not overcook the Bok Choy since it is nice to eat them still crisp

  • add the cooked noodles and stir them into the vegetables

  • add soya sauce to taste


Tip:


Bok Choy with noodles are great with fried salmon!
