Zucchini in Oven with Mexican Twist

This Zucchini in Oven with a Mexican twist Dish recipe turned out to be very tasty. One of my kids was saying right after dinner that this recipe was good to make it into a weekly Friday Night Recipe. And that is quite a compliment, because Friday Night Dinners are equal to pizza nights!
For this dish you have to slice the zucchinis or courgettes (French/European) lengthwise.
I saved these not usable-for-making-rolls-zucchini pieces, to make it into a side dish. I almost never throw out food. It would be such a waste.
So I cut these zucchini pieces into smaller pieces and fried them briefly in a frying pan with oil, salt and pepper.

I also used the left-over pulled chicken as a side dish.

In the end my plate looked like this:

The zucchini rolls in oven dish has lots of healthy ingredients in it. Cilantro is one of them.

How to make this Zucchini in Oven with Mexican Twist Dish?
Ingredients:
1 or 2 #zucchinis, sliced lengthwise
1 #onion, cut into small pieces
2 #garlic cloves, minced
2 teaspoon cumin
1 teaspoon #chilli powder
1/2 teaspoon #oregano
3 cups shredded chicken, cooked
olive oil for baking
1 1/2 cup enchilada sauce, divided
1 cup shredded cheddar cheese
1 #avocado, sliced
1-3 sprigs of #cilantro
4 tablespoons sour cream
2 tablespoons #jalapeño peppers, sliced
salsa mild
1 #lime, sliced
Preparations onion/chicken mix:
fry onion until tender
add garlic, cumin, chilli powder and oregano until mixed
add shredded cooked chicken
add enchilada sauce and heat until heated
Preparations:
preheat oven to 350º F
put 3 slices of zucchini on top of each other, in a way that they cover 1/3 of the other
spoon one tablespoon onion/chicken mix on one side of the slices of zucchini
roll this into a roll
put the rolls in an oven dish, that is oiled
pour 1/2 cup of enchilada sauce on top of the rolls
sprinkle some shredded cheese
bake in oven for around 20 minutes, or until heated
put avocado, peppers, cilantro, salsa and sour cream on top before serving
Prep time: 35 min
Serves: 4
Cook time Oven: 20 min
Special kitchen tools needed:
garlic press
herb scissors (for cilantro)
potato peeler or cheese/vegetable slicer (for slicing the zucchini)
